Ingredients
  

  • 2 tbsp Oil
  • ½ tbsp Mustard seeds
  • ½ tbsp Cumin seeds
  • 4-5 curry leaves
  • 1 cup sliced onion
  • Add 4-5 sliced Brinjal
  • 1 cup chopped tomato
  • 1 tbsp Red chili powder
  • 1 tbsp Sambar powder
  • 1 tbsp Garam masala
  • ½ tbsp Turmeric powder
  • 1 tbsp Salt
  • ½ cup water
  • ½ tbsp Jaggery
  • 1 handful fresh Coriander leaves

Instructions
 

  • Take a pan and add 2 tbsp Oil
  • Add ½ tbsp Mustard seeds
  • Add ½ tbsp Cumin seeds
  • And add a few curry leaves and let the splatter
  • Next, add 1 cup sliced onion and saute
  • Add 4-5 sliced Brinjal and saute
  • Cook it well
  • Now, add 1 chopped tomato and cook well
  • Add 1 tbsp Red chili powder
  • Add 1 tbsp Sambar powder
  • And add 1 tbsp Garam masala
  • Add ½ tbsp Turmeric powder
  • Mix everything well
  • Add 1 tbsp Salt and mix
  • Now, add ½ cup water
  • Add ½ tbsp Jaggery and mix well
  • Close the lid and cook well
  • Lastly, add some fresh Coriander leaves
  • Now, the tasty Brinjal curry is ready
