Take 2 cups of Toor dal in a pressure cooker
Add ¼ tbsp of Turmeric powder
Add 1 tbsp oil and add 2 cups of water and cover the lid.
Wait for 3-4 whistles and then turn off the gas.
Now, add 1 tbsp of oil into a pan and fry it until golden brown.
Add 5-6 Garlic cloves and fry for 2 minutes
Next, add 5-6 Curry leaves
Add A handful of coriander leaves and saute well for 1 minute.
Once, everything is fried well turn off the gas and let it cool.
Transfer it to a mixer jar
Now, add 1 cup of freshly grated coconut
And add 2 tbsp Sambar powder
Add little water and grind it into a smooth paste.
Take a mortar and piston
Add 3-4 Garlic cloves and a handful of freshly grated coconut and crush it.
Take a Kadai/ Pan
Add 2 tbsp oil
Then add 1 tbsp Cumin seeds and 1 tbsp mustard seeds and let them splatter.
Next, add crushed garlic and coconut mixture
Immediately add 5-6 Curry leaves and Sliced Onions into the pan
Saute everything well for a minute.
Now, add 1 cup chopped tomatoes and fry until they become soft.
Close the lid and let it cook for about 2 minutes.
Open the lid and mix well
Add the ground masala paste into the pan and saute well.
Add 1 tbsp Red chili powder, 1 tbsp Garam masala, and ¼ turmeric to the mixture and mix well.
Adjust the salt as per taste and mix well.
Finally add, Cooked Toor dal into the mixture and mix everything well.
Adjust the consistency by adding water.
Close the lid and bring it to a boil.
Once, everything is cooked well add Coriander leaves and give a mix.
Now, the Hotel style Idli sambar is ready to savor.
You can serve the sambar with Dosas and rice too.
