Ingredients
  

  • 2 Big-sized Brinjals
  • 1 Medium-sized onion chopped
  • 1-2 Tomatoes
  • 1-2 Green chilies Optional
  • 1 &½ tbsp Red chili Powder
  • ½ tbsp Niger seeds powder/ Gurellu powder/ Uchhellu powder
  • 2 tbsp Coriander leaves
  • ½ tbsp Salt
  • 1 tbsp Oil

Instructions
 

  • In a mixing bowl add 2 big sized brinjals cut into dice
  • Add 1 chopped Onion
  • Add 1-2 chopped Tomatoes based on your requirements
  • Now, add 1 chopped green chili
  • Add 1&½ tbsp Red chili powder
  • Add ½ tbsp Niger seeds powder
  • After that, add ½ tbsp Salt according to the taste.
  • Lastly, add 1 tbsp oil for binding.
  • Add 2 tbsp chopped Coriander leaves
  • Now, mix everything well.
  • Now the tasty and healthy Badanekayi/Brinjal Pachadi is ready.
