Brinjal curry is the most delicious curry…It is one of the compulsory food prepared in almost every function in North Karnataka…I usually go to attend a function in the hope of savoring Brinjal curry…I just love the taste of it…In today’s blog, I am going to share the recipe for Brinjal curry… It takes very little time to prepare it…

Recipe for Brinjal Curry
Ingredients
- 2 tbsp Oil
- ½ tbsp Mustard seeds
- ½ tbsp Cumin seeds
- 4-5 curry leaves
- 1 cup sliced onion
- Add 4-5 sliced Brinjal
- 1 cup chopped tomato
- 1 tbsp Red chili powder
- 1 tbsp Sambar powder
- 1 tbsp Garam masala
- ½ tbsp Turmeric powder
- 1 tbsp Salt
- ½ cup water
- ½ tbsp Jaggery
- 1 handful fresh Coriander leaves
Instructions
- Take a pan and add 2 tbsp Oil
- Add ½ tbsp Mustard seeds
- Add ½ tbsp Cumin seeds
- And add a few curry leaves and let the splatter
- Next, add 1 cup sliced onion and saute
- Add 4-5 sliced Brinjal and saute
- Cook it well
- Now, add 1 chopped tomato and cook well
- Add 1 tbsp Red chili powder
- Add 1 tbsp Sambar powder
- And add 1 tbsp Garam masala
- Add ½ tbsp Turmeric powder
- Mix everything well
- Add 1 tbsp Salt and mix
- Now, add ½ cup water
- Add ½ tbsp Jaggery and mix well
- Close the lid and cook well
- Lastly, add some fresh Coriander leaves
- Now, the tasty Brinjal curry is ready
