In today’s blog, I am going to share the Beetroot curry recipe. Beetroot is one of the highly nutritious vegetables. It is power packed with high fiber and many micronutrients. Beetroot helps in improving our hemoglobin level and fighting anemia. It is very important to consume Beetroot on a regular basis. So, in Indian cooking, we consume Beetroot in many ways. But, Beetroot curry is the most common yet tasty way of eating Beetroot. It is healthy as well as tasty. So, let’s jump into the Beetroot curry recipe.

Ingredients

2 tbsp oil
1/2 tbsp Mustard seeds 
1/2 tbsp Cumin seeds
4-5 curry leaves
2 tbsp chopped Coriander leaves 
1 small onion chopped into dice  
2 medium-sized grated Beetroot 
1/2 tbsp Turmeric powder 
1 tbsp salt
1 tbsp red chili powder

Instructions with Images 

In a pan add 2 tbsp oil

Add 1/2 tbsp Mustard seeds and 1/2 tbsp Cumin seeds

Add 4-5 curry leaves and 2 tbsp chopped Coriander leaves and saute

Now, Add 1 small onion chopped into dices and saute until onion turn golden brown

Now Add 2 medium Beetroot grated

Saute until Beetroot becomes soft

Now, add 1/2 tbsp Turmeric powder

Add 1 tbsp salt according to taste and mix well Close the lid and cook for 2 min on low flame

Now Add 1 tbsp red chili powder and mix well

Cook for 2 more minutes on low flame
